Ingredients (serves 4)
- 4 4 oz chicken breasts filets
- ½ cup sun dried tomatoes
- 1 cup fresh basil leaves
- 2 cups cherry tomatoes
- 1 lemon
- 4 tbsp minced garlic
- 4 tbsp olive oil
- ½ cup heavy whipping cream
- Pepper
- Red pepper flakes
- Salt
- Dry Basil
- Dry Thyme
Instructions
- Preheat your oven to 400 degrees
- Using a stove burner, heat an oven-safe pan with low heat
- Add the olive oil, minced garlic, and some of the seasonings salt, pepper, and red pepper flakes to the pan
- Wash and dry the cherry tomatoes, then cut them into halves
- Add the halved cherry tomatoes to the pan and let them sauté on low heat
- Cut the sun dried tomatoes across their width into 4 pieces and set aside
- Wash, pat dry, and remove the stems from the basil, then set aside
- Pat each chicken breast dry with a paper towel, then add salt, pepper, dry basil, and dry thyme, patting the seasonings into the breasts with your hands
- Remove the cherry tomatoes from the pan to rest on the side, and turn up the heat to medium
- Place the chicken breasts into the pan and sear on both sides until golden
- Once the chicken is golden on both sides, add back in the cherry tomatoes, and add the sun dried tomatoes and basil
- Pour the heavy whipping cream into the pan, letting the oil, chicken fond, tomatoes, and basil mix to create an almost light pink sauce
- Let simmer on medium for 5 minutes before returning to low heat to let sit for another 5 minutes
- Squeeze all the lemon juice into the sauce
- Add your oven-safe pan to the oven and cook for 15 minutes
- Once cooked, remove pan from the oven and baste the chicken with the remaining sauce
Tuscan chicken, sometimes referred to as Marry Me Chicken, is warm and comforting. Enjoy this juicy dish with a loved one (or group of them) with your favorite red wine – can’t ever go wrong with a malbec or bordeaux.
While the sauce is light and creamy, you can add some shredded parmesan to make it more savory. I recommend adding some lemon zest when plating this decadent and juicy chicken. My personal favorite side to this dish is some oven-roasted fingerling potatoes with Italian seasonings.
